We took a break from our “Tour” duties to have a relaxing lunch with old friends in Covina CA. The meal was certainly worthy of picture taking, but it was just good to kick back and enjoy each others company. Our first course was a salad of beefsteak tomatoes and avocado topped with Papa Rick’s famous blue cheese dressing and bacon bits, garnished with a drizzle of balsamic glaze. Rick fired up the smoker while we were having the salad. The main course consisted of smoked salmon, chopped salad and basmati rice. For the grand finale Tanya served delicious apple pie a la mode and dark roast coffee. The avocado and beefsteak tomato salad was to die for, but the salmon topped even that! Driving back into the setting sun on the 10 with the top down we were grateful for good friends.
